After my blunder with the sad, as in not crispy, sweet potato fries. I needed to redeem myself and make something worthy of the Jalapeno Arugula Aioli that I made last week. I was still on a Mexican kick and decided I’d roast up some yams and make these Roasted Yam tacos. Shout out to all my vegetarian friends 😉
All of these ingredients sounded good in my head up until the day I was purchasing everything and I became a bit skeptical. I wasn’t hungry at the time, thus my inspiration had faded. Shopping on an empty stomach is actually better when trying to think of creative ways to combine ingredients, or basically help me over shop and then I have to figure out how to eat everything before it goes bad.
In the end these were AMAZING, the combination of flavors melded really well all together with the arugula in the aioli and fresh arugula to top, the Mexican chili powder and cumin on the yams to give it that Mexican flare, tangy feta, and fresh squeezed lime juice to top it all off.
Roasted Yam and Jalapeno Aioli Tacos

Yields 6-8 tacos
Ingredients for Roasted Yams
2 medium sized yams
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon hot mexican chili powder
1/4 teaspoon ground black pepper
Roasted Yam Preparation
Preheat oven to 400 degrees F.
Peel yams and cut into one inch cubes. Toss in olive oil and seasonings listed above. Spread out on a baking sheet and bake for 25-30 minutes, stirring around half way through.
Taco Ingredients
Taco tortillas – Corn & whole wheat blend pictured above
Roasted yams
1 yellow bell pepper, de-seeded and sliced into thin strips
Arugula
Cilantro-lightly chopped
Feta cheese-crumbled
Fresh squeezed lime juice

Taco Preparation
If desired, heat tortillas one by one on a medium temperature skillet, flipping to brown each side slightly. Layer each tortilla with yams, bell pepper slices, arugula, cilantro, feta, good squeeze of lime juice and aioli.
Can also top with hot sauce for extra kick.
