Coconut Chia Seed Pudding

Hi there 🙂 I’ve been keeping things simple lately and doing whatever is easiest – it seems to make each day go by smoothly and is more enjoyable that way. I thought I’d be blogging more this year but in taking care of my sweet girl Harper and enjoying the football off season as a family I haven’t had much time for this little blog of mine. Life with a baby is busy so anything I can do to enjoy a delicious meal that’s quick and easy is a simple pleasure these days. I’ve been really enjoying making these Coconut Chia Seed Pudding bowls lately. They’re an easy make ahead breakfast that only have 4 simple ingredients and can be mixed together the night before and left to set in the fridge overnight. I feel silly sharing a “recipe” with only 4 ingredients because it doesn’t feel like much of a recipe for being so quick and easy. But, I’ve been enjoying them so much that I wanted to share and give you a simple pleasure breakfast of your own too!

I’ve been shopping at Trader Joe’s a lot lately because of all their simple meal options and I just feel like I eat healthier when I shop there. (Hello pre-made salads for lunch everyday!) Two items on my shopping list lately have been the Coconut Beverage (a milk substitute) and Cultured Coconut Milk (a dairy yogurt substitute) pictured below. I love that they’re dairy free and when combined with chia seeds and honey they make the most simply delicious Coconut Chia Seed Pudding. If you’re not near a TJ’s I’m sure mixing up your own ingredients from your local store would make a delicious combination too – this is just what I’ve been loving! I love that you can top your chia pudding with whatever fun toppings you have such as berries, nuts, coconut flakes, granola, etc. Do what makes you happy 🙂 On a normal morning my bowls never look this pretty 😉 I’m usually just dumping everything in a bowl and scarfing it down as fast as I can so I can be with my girl, but let me tell you it’s just as delicious that way too!

Coconut Chia Seed Pudding

  • Servings: 4
  • Difficulty: SO easy

Simply delicious make ahead Coconut Chia Seed Pudding.

Ingredients

  • 6 ounces Cultured Coconut Milk Vanilla (Trader Joe’s – see image above)
  • 1 cup Coconut Beverage Original Unsweetened (Trader Joe’s – see image above)
  • 2 tablespoons honey
  • 1/4 cup chia seeds

Directions

Combine all ingredients in a bowl making sure to stir until all of the ingredients are well incorporated – especially the honey. Chill 4 hours or overnight. You’ll know the pudding is ready when it has thickened to a pudding like consistency and the seeds have expanded.

Serve chilled with your favorite toppings.


My favorite toppings are currently sliced strawberries and bananas, blueberries, pecans, and unsweetened coconut flakes.
