Coconut Mango Froyo 

Happy 4th of July week! Hope you all have some fun plans for the holiday week that includes some sun, water, fireworks, bbq, family and friends! We’ll be spending the day with family doing those exact things and I can’t wait to get a good tan going on this belly of mine. Also, I cannot believe I’m having a baby next month!!

I know I’ve been a little MIA lately (eh hem, this entire year on posting recipes – SORRY!), but this year’s been a busy one. Expecting our baby girl, both of us getting new jobs (2 for me), moving to Vegas and spending time with family has kept me so busy and unfortunately hasn’t left much room to be in the kitchen creating new recipes.  But besides all the crazy, I couldn’t miss sharing this Coconut Mango Froyo (frozen yogurt) recipe for the 4th of July because it’s a no fuss recipe for a super easy sweet treat! All this recipe takes is 4 ingredients, a blender or food processor and your toppings of choice – mine being fresh cut up mango. Mango is one of my absolute favorite fruits and is the perfect summertime treat on a hot day.  I love that this recipe is quick and easy to make and know it’s perfect for those of you who are super busy but still want to make something fun for the holiday or any day – everyday deserves a little treat I think 😉

Coconut Mango Froyo

  • Servings: 4

An easy recipe for sweet and tart Coconut Mango frozen yogurt.

Ingredients

  • 2 cups frozen mango chunks
  • ½ cup frozen pineapple chunks
  • ¼ cup nonfat greek yogurt
  • ¼ cup cream of coconut
  • fresh mango, cubed for topping

Directions

In a high powered blender or food processor, add all ingredients and blend together on high. Stop to redistribute fruit and continue blending until the mixture is smooth and puréed together. Top with or stir in fresh cut up mango for serving.

Serve immediately or freeze until you reach desired texture.


Add your favorite toppings of choice like fresh pineapple or coconut shavings. You could even customize the recipe by using different frozen fruit for a different flavor froyo 🙂
