Gimme S’more Cookies

How is it already December 2nd? Thanksgiving week flew by for us! My brother-in-law Larry and his wife Sheraden came to visit us over the holiday weekend to celebrate Thanksgiving and see the football game. We had a blast hanging with them, as always! Larry and I both cooked our first turkeys and they both turned out so good. Larry’s was a smoked turkey, and it was delicious! I will definitely be requesting that for years to come. 😉 I used a Pioneer Woman turkey recipe (so typical) for the brine, roasted turkey and gravy. It was all so easy to follow, I can always count on her for a quality recipe. Cooking that dang turkey stressed me out all week though and I couldn’t sleep because I was afraid everything would go wrong, but thankfully it turned out great the day of. The only bad thing that happened in the process was spilling about a gallon of the brining liquid all over myself and the kitchen after it had touched the turkey so that was a fun clean up… not. Our Thanksgiving was full of family, including our Football family, lots and lots of food, and being thankful for everything life brought us this year.

On Friday Larry, Sher and I did some serious Black Friday shopping which is pretty painless in Moscow since there aren’t a lot of people around, and then we went up to Coeur D’Alene for the rest of the day. We got to see downtown be lit up with Christmas lights and watched the fireworks show. Black Friday sales got the best of me this year (eek!) but, I did get almost all of our Christmas shopping done which is a plus! Saturday was game day and the Vandals WON their 7th game!! It was an emotional roller coaster type of game, Sher and I were joking we’re like Aly Raisman’s parents because of how intense we can get in the stands when we’re together.

After such a great Thanksgiving weekend and big win I thought I’d make some “Gimme S’more Cookies” for Eric’s players and also because what’s more fitting for the holiday season than having copious amounts of sweets around and not being able to stop eating them. These Gimme S’more Cookies are two of my favorite sweets in one combining chocolate chip cookies and S’mores! They’re full of white and semi-sweet chocolate chips, chewy mini marshmallows, and crunchy graham cracker pieces hidden in them. They’re giant, soft, chewy, and so buttery, believe me you’ll be sayin “gimme s’more” if you make them…and whether that’s a good or a bad thing is up to you 😉

Gimme S'more Cookies

A s'more and chocolate chip cookie in one delicious treat!

Ingredients

  • 1 pound salted butter, at room temperature
  • 2 cups brown sugar
  • 1 ½ cups granulated sugar
  • 2 tablespoon vanilla extract
  • 3 eggs
  • 6 cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons sea salt
  • 1 ½ cups white chocolate chips
  • 1 ½ cups semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1 cup graham crackers (4 graham cracker sheets)
  • Parchment Paper

Directions

Preheat oven to 325ºF

In a large mixing bowl using a hand-mixer or using a stand-mixer cream together the butter, sugar, eggs and vanilla. In a separate mixing bowl combine the flour, baking soda, and salt. Mix the dry ingredients into the wet ingredients in thirds, be sure it is thoroughly mixed together. At this point the mixture should be sticky and dry.

Place the graham crackers in a plastic bag and lightly crush them up so they’re in small crumbles and pieces, do not turn them into a powder. You’ll want them to be seen and tasted in the cookies.

Lastly fold in the chocolate chips, marshmallows and graham cracker pieces into the dough.

Line your cookie sheets with parchment paper (this is a necessary step for the marshmallows) and using an ice cream scoop, scoop out leveled balls of dough, placing them 2 inches apart as they’ll spread out quite a bit.

Place the cookie sheets into the oven and bake for 7 minutes. At the 7 minute mark switch the cookie sheets, so the bottom sheet will then go on the top rack and the top sheet will go on the bottom rack. Bake for an additional 7-8 minutes. Total bake time: 14-16 minutes

Remove the cookies from the oven, they’ll be really soft, give them a few minutes to firm up before moving them to cooling racks. Enjoy warm or place them in an airtight container for up to a week.
