Korissa’s Oatmeal Bars

Happy Friday! We made it! This week was long, for me it consisted of work, gym, eating up random leftovers in the freezer, and fending off a cold. Work was busy and Eric was gone most of the week so I am ready for this weekend!

I had a major sweet tooth craving last night and was in need of some cookies and milk, but we didn’t have any cookies or anything sweet in this house so I decided to do some impromptu baking and made a batch of my sister-in-laws easy Oatmeal Bars. Little did I know Eric would also bring me a HUGE root beer float from A&W in the middle of my baking session. I had absolutely no problem downing two desserts.

I thought I’d share the recipe for the Oatmeal Bars because they were a serious breeze to make, start to finish it only took me 30 minutes before I was enjoying them on the couch with a glass of milk, cozy under the blanket watching Fargo with EB.
I also enjoyed them for breakfast 🙂
 I swapped the called for raisins for a mix of chocolate and white chocolate chips, added extra vanilla and I basically had myself some oaty cookie bars.

Korissa’s Oatmeal Bars

Makes about 16 bars

Ingredients
3/4 cup butter, melted
1 cup brown sugar
½ cup white sugar
1 egg
2 tablespoons vanilla
¼ cup water
1 and ½ cups flour
1 teaspoon baking soda
½ teaspoon salt
3 cups quick oats (do NOT use rolled/old fashioned)
1 cup raisins, or nuts, or chocolate chips*

Preparation
Preheat oven to 375º

In a medium size bowl, mix together the first six ingredients thoroughly. Next add in the flour, baking soda, salt and oats, combine thoroughly. Fold in your desired extras.

Grease a 9×12 baking dish and pour in oatmeal bar mixture, and spread evenly to fill the baking dish. Bake at 375º for 18-20 minutes, or until edges are slightly browned*.

*Add whatever extras you like, they are optional, I used half milk chocolate and half white chocolate chips.
*Korissa’s trick is to remove them even if they don’t look done when the time is up, they will firm up as they cool, but will still be the perfect soft texture.


 

I’ve got some crazy plans this weekend, I ordered some fridge organizing  bins and can’t wait to purge and cleanse our fridge situation, pictures to come. Plus I’ll be binge watching GIRLS, I finished season 1 this week and I am hooked, how did it take me this long to start watching it?!
