Now that it is officially October I can embrace all things pumpkin spice without any shame. I think everyone has a recipe similar to these Pumpkin Spice Drop Cookies, yet I want to share because eating these cookies made me so happy!
It has been absolutely gorgeous here in Moscow, there is no doubt it’s fall. This is at the arboretum on the UI campus. I find it so relaxing to go walk the trail there and enjoy all the fall colors, it is my favorite place here in Moscow.
Also now that it’s October I did a little fall decorating. We have a tiny little mantle at the place we’re living and I was super excited to decorate it.
Here’s a few more decorations I was excited to put out. I love using neutral colors for seasonal decorations that still go with the rest of our home.
And back to the cookies… I am calling these “cookies” because they look like cookies and bake on a cookie sheet, yet they are moist and soft like a muffin top. Call them what you wish, but please make them, you’ll too be so happy!
Pumpkin Spice Drop Cookies
Yields 18-20 cookies.
Preheat oven to 350 degrees F.
Ingredients
16.5 ounce box spice cake mix
15 ounce can pumpkin
12 ounces white or semi sweet chocolate chips (I used half of each)
Preparation
Combine all ingredients in a medium sized bowl. Drop large spoonfuls of cookie batter onto a baking sheet about 1 inch apart. Bake for 15-18 minutes.
Enjoy right out of the oven, or one every couple hours and every morning until they are gone like I did. (NO shame here!) They are perfect with a dark cup of coffee.
